Ingredients: 2 lbs okra, trimmed; 2 tablespoons olive or canola oil; 2 cups chopped onions; 3 cups chopped tomatoes; 1 minced jalapeño pepper; 2 garlic cloves; 2 teaspoons salt; 1/2 teaspoon black pepper
Directions: In a heavy skillet, heat the oil over medium heat. Sauté the onions in the oil until soft and transparent, about 3 minutes. Stir in the tomatoes, chilies, and garlic. Cover and cook over medium heat for 5 minutes. Add the okra, salt, and pepper. Mix the ingredients thoroughly. Cover and reduce heat to low. Simmer until okra is tender, approximately 20 minutes. Serve immediately.
